The Strawberry Field
From Harvest to Creation
SweetO grows strawberries indoors, using a controlled environment and AI technology to support the growing process. For this project, Flor Saigon translated that process into a physical landscape, following the strawberry from harvest and selection to its transformation into dessert.
The starting point was the harvest. At one end of the table, strawberries gather around a larger floral structure, creating a concentrated and abundant composition. From there, the arrangement gradually opens up. The strawberries become more separated, the height changes, and the table begins to feel lighter as the eye moves from one end to the other.
The Harvest
The first section represents abundance. Instead of creating a literal strawberry field, Flor used density, scale and repetition to suggest the feeling of a harvest. The floral structure creates a strong starting point, while strawberries extend outward onto the table. The composition was designed to feel gathered rather than evenly distributed, giving the eye somewhere to begin.
The Selection
The second section focuses on the individual strawberry. After harvest, the fruit is selected and prepared for the next stage. This idea became a change in scale and spacing across the table.
Transparent acrylic stands were introduced at three different heights, allowing individual strawberries to sit above the surface. The stands keep the fruit visually light and create a gradual transition between the dense harvest and the more structured dessert section. The empty space around each piece was just as important as the pieces themselves.
The Transformation
The final section moves from fresh fruit into dessert. Strawberries appear alongside pastries and other elements of the SweetO experience, changing their role from something freshly harvested into an ingredient within the finished creation.
This is where the three stages begin to connect. Floral elements continue through the composition, while the acrylic structures introduce a different material language. The dessert display at the end of the table completes the movement from growing, to selecting, to making.
The original concept gave us the structure, but the final composition was developed on site. Once the actual materials, table and food presentation came together, proportions and spacing had to be reconsidered. Some elements needed more room around them. Others were reduced or repositioned so that the table could function properly while still keeping the visual direction of the concept.
For us, this is where floral artwork for an event becomes design work. There are practical conditions to consider, but every decision still needs to belong to the larger idea. The table has to work for the people using it, for the food being presented and for the space around it, while maintaining a clear visual language.
